There are essentially three types of cocoa:

-Criollo, is mostly one of the fine flavor cocoas, with a fine, delicate aroma.

-Forastero, similar to the Robusta coffee, insensitive, productive and powerful.

-Trinitario, as a hybrid, it combines the basic characteristics of the two main varieties.

Our HM cocoa consists of a mixture of different Criollos from several countries of origin.
